Christmas and Parmesan Meatloaf

Here are some pics from the Linley Christmas that we had in the church basement...









 And here is another recipe from Pinterest: Parmesan meatloaf....
Ground beef, 2 eggs, breadcrumbs, basil, thyme, oregano, garlic powder, onion powder, salt, pepper, parmesan cheese....
 Squish it all up...
 Top with marinara sauce and bake....
 You're supposed to top it with an Italian cheese blend, but I apparently got too hungry and just ate it as soon as  I took this pic.
This was pretty good, and gave a good flavor to regular meatloaf.

Packing and Loaded Mashed Potatoes

Here are some more progress pictures of packing...

 This recipe I ripped out of a magazine a long time ago...
Cut up and boil the potatoes...
 I had actually already packed my hand mixer...so I just smashed the potatoes with the mixer attachment...
 Add the butter and salt and pepper...
 Cover with bacon bits and cheese...I actually used the wrong type of cheese also, LOL
 And bake.
This tasted kinda bad right after I made it, but when I took some to work and reheated it, it was really good...

Books and Blueberry Breakfast Cake

Here is the next book I finished reading...
Another one from one of my favorite authors Dean Koontz with some really creepy stuff going on...
 And I made Blueberry breakfast cake, from Pinterest, on Christmas Eve to eat on Christmas morning.
Mix the sugar and butter...
 Add the egg and vanilla....
 In another bowl coat the blueberries with flour....
 Add some more flour to the wet mixture...
 Both mixes ready to go....
 And mix them both together and bake.
 This was really good especially when you warm it up!

Wild Lights and Andes Mint Cake

 Here is the Andes Mint cake that I made for Christmas, recipe on Pinterest....

Start with the dry ingredients...
 Egg and oil...
 Chop up a bunch of Andes mints...
 And add them to the batter...
 Then bake
 The cakes did not come out of the pans well....but I got to scoop out the excess and eat it warm, and the cake part was delicious!
 Stacking....
 Making the mint buttercream...
 The recipe was way off and was too runny even though I tried to add more powdered sugar...
 Very drippy icing....
 Chocolate chips...
 Boiling whipping cream....
 Pour it over the chips and stir to melt....
 With the ganache on top.
I woke up the next morning and the green icing had oozed out all of the green food coloring into a slime...so this whole cake had to go into the trash... : (
