Fiesta Dip, Gringo Dip and Blueberry Crumble

We had a March madness potluck last month at work, so I decided to finally use my 3 section crockpot that I got for Christmas...
The recipe for Fiesta Dip came with the crockpot..
Put refried beans, salsa, and cheddar cheese in the crockpot...
 The second dip is Gringo Dip! Everyone's favorite at 54th St.
You put Velveeta Queso Blanco, shredded pepper jack, shredded parmesan, pico de gallo, milk, cayenne, and frozen spinach in the crockpot...

 And the third one I decided to make a dessert, blueberry crumble
Put a can of blueberry pie filling in the bottom...
 Cut some butter into a box of yellow cake mix...
 And crumble that on top...
 I prepared these the night before work and stuck them in the fridge to wait....
 And here they are in the corner of my office heating up...
Everyone loved the Fiesta Dip and it was the first one gone. The Gringo dip really does taste like the real thing and I still have the ingredients to make more! The Blueberry Crumble took forever to bake and I had to leave for an appointment, so my friend Jenn ended up eating most of it and told me how good it was...there was just blueberry goo left when I got back to the office.

Baked Eggs and Spring Blizzard

I got this recipe I believe from the Yahoo webpages weekly recipes a really long time ago..
Cook some bacon...
 Crack an egg into each ramekin...
 Add some milk...
 Mix up cheddar, parsely, salt and pepper....
 Add some to each ramekin...
 Top with crumbled bacon...
These were okay, but nothing extraordinary.

Mocha brownies and Baked Ravioli

This recipe was cut out of the newspaper...
You cream the butter and sugar...
 Melt some baking chocolate...
 Add eggs...
 Melted chocolate...
 Then add that in...
 Add vanilla also, then the flour...
 Put it in the pan...
 And cool...
 Then the icing is butter, powdered sugar, cocoa, salt and vanilla....
 Add some cooled coffee...the proportions were off on this and it made it pretty runny so I had to add more powdered sugar...
 Then ice. This was strongly coffee flavored, so it was too much for me. Some people at work liked it, but you really need to eat it quickly or else the coffee makes the icing liquefy.
 Next is baked ravioli from Pinterest...Heat up some olive oil, garlic powder, salt and pepper...
 Add thyme, oregano and stewed tomatoes and diced Italian tomatoes...
 Chop up the chunks with your spoon and simmer.
 Boil your frozen ravioli
 Add everything together...
 Get ready to bake...
 Cover with Parmesan and mozzarella
 All done
 With some Texas toast...this was really good!
